Turkey & Zucchini Meatballs

Meatballs have become one of my go to meals. The kiddos love them, they are easy to make and are so versatile. These meatballs are grain and dairy free and full of veggies for added nutritional benefits. I like to use zucchini, cauliflower rice or spinach, but you could use any vegetable you would like. I usually double the batch as well and keep half in the freezer for later use. Just mix with desired sauce, like marinara, to reheat and serve.

Recipe:

1 lb ground turkey
1.5 zucchini grated
1/2 onion grated
1 pasture raised egg
2 tbsp coconut flour
1/2 tbsp onion powder
1/3 tbsp garlic powder
1 tbsp extra virgin olive oil
1/2 tbsp sea salt
Pepper

Directions:

Mix all ingredients except turkey first, then add ground turkey. I like to use a small ice cream scooper to make balls – this keeps them all the same size for an even bake time. Bake in the oven on 400 for about 20 – 30 minutes depending on size, flipping halfway through.  Pull out and serve as desired.

It is also easy to change these meatballs up. You can make them more like game day hot wing poppers, asian meatballs, traditional spaghetti and meatballs, and even add them to soup with bone broth and veggies. Below are a few ways to change them up…

Game Day Meatballs/Poppers:

For a super-bowl/game-day spin, I like to toss the meatballs in Steve’s PaleoGoods wing sauce and cook another 5 minutes then serve with Primal Kitchen Foods ranch dressing.

Traditional Meatballs:

To make a traditional spaghetti and meatball dinner, I like to use either a gluten free pasta from Jovial Foods or grain free pasta like Eat Banza or Cappello’s (found in the freezer section at whole foods)  with a whole 30 approved sauce from Organic Bello. Once meatballs are done, add to sauce and simmer another 10 – 15 minutes before adding pasta to sauce.

Asian Meatballs:

I have even made these same meatballs into an asian inspired dish adding a coconut amino, coconut vinegar and sesame sauce. 1/4 cup coconut aminos, 1/4 cups coconut vinegar, 1 tbsp sesame oil, 1 tsp ginger powder or fresh grated ginger, 1 tsp grated or chopped garlic, 1 tsp arrowroot powder to thicken sauce. I serve the asian meatballs with roasted veggies also tossed in coconut aminos, coconut vinegar and sesame oil.

Soup and Meatballs:

Add meatballs to homemade bone broth with veggies like carrot, celery, onion, zucchini and spinach. Top with fresh lemon juice, avocado and/or herbs like cilantro or green onion.

Keep is easy by serving roasted veggies with the meatballs. I prepare both on a sheet pan and cook for the same amount of time on the same temperature. A super easy, sheet pan dinner.

As you can see, there are many ways to enjoy and serve these turkey and zucchini meatballs.
