I made soup the other night hoping to make it feel like fall even though it’s still triple digits here in Scottsdale, AZ. The soup was a success!! It turned out super yummy and brought a little fall into our home.

This soup was super easy and used mostly ingredients from my freezer. I added 1 large container of my frozen homemade bone broth (3-4 cups), 2 bags of frozen butternut squash, 1 bag of cauliflower rice, 1/2 onion, 1 peeled apple, 5 carrots, 5 cloves garlic, 1/2 tsp cinnamon, 1/4 tsp ginger, 1/4 tsp nutmeg, 1/8 tsp cayenne pepper, salt and pepper. The cayenne pepper tasted good to hubby and I, however it was a little spicy for the kiddos. Next time, I will probably leave it out. Once everything was in the pan, I simmered the veggies until tender and then used a hand blender to purée everything.

Ingredients:
1 large container of my frozen homemade bone broth (3-4 cups)
2 bags of frozen butternut squash
1 bag of cauliflower rice
1/2 onion
1 peeled apple
5 carrots
5 cloves garlic
1/2 tsp cinnamon
1/4 tsp ginger
1/4 tsp nutmeg
dash of cayenne pepper (optional)
Directions:
Simmer all ingredients until tender. Use a hand blender to puree until smooth. Serve with sourdough toast topped with grass-fed butter and enjoy!!
