Veggie + Quinoa Nuggets

We always have some sort of leftover veggies in our fridge, and the kiddos don’t always like to eat the leftover veggies as is. So, I decided to try something new with the leftovers. I combined the leftover veggies with some leftover quinoa that I also had in the fridge and made veggie nuggets.

Ingredients

1.5 cups leftover veggies chopped (I used zucchini, broccoli and sweet potato)

1.5 cups sprouted quinoa or rice cooked in bone broth

3 pasture raised eggs

1/4 – 1/2 cup shredded raw cheese

1 tsp onion powder

Pepper

I didn’t add salt since all the food was previously salted but feel free to

Directions

Form nuggets using an ice cream scooper or place in silicone muffin cups and bake on 400 for 25 minutes flipping halfway through for nuggets. Serve with paleo ketchup or ranch.
