Grain-Free Short Rib Pasta

I love short ribs. Who doesn’t. They are super easy to make in the crockpot and taste amazing and tender. Perfect for both adults and kiddos. They can be dressed up for entertaining or can be used in a simple pasta like I made. I used grass-fed and organic short ribs and topped grain free noodles. You could also top sweet potatoes, cauliflower rice or base dish of choice.

I put a dry rub on the room temperature ribs and then seared for a couple minutes on each side until golden brown. I then transferred the short ribs to the crockpot and added in sauce and remaining ingredients. Cook low and slow until dinner time. Once cooked, I shredded short ribs with two forks. I served over Cappello’s grain free pasta and topped with some raw cheese.

Dry Rub:

  • 1 tbsp rosemary
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp paprika
  • 2 tbsp sea salt 1 tsb black pepper

Massage dry rub into room temperature ribs and sear on a hot skillet. Once each side is browned, transfer meat to crockpot set on low. Add in sauce from below.

Sauce Ingredients:

  • 2-3 lb short rib with bone
  • 1 15 oz can tomato sauce
  • 4 dates
  • 6 cloves garlic
  • 1/2 cup balsamic vinegar

Once meat is done, remove from crockpot and shred with two forks. Cook pasta following package directions. Place cooked meat and pasta together in a bowl and mix. Top with shredded raw cheese, optional, and serve. Enjoy!!
