Sprouted Oatmeal Breakfast Bars

I am constantly trying to find new and quick ways to feed my kiddos breakfast or on the go snacks. We are a big egg family and most of our breakfasts consist of eggs, but it’s nice to have other options out there for when we don’t feel like eggs. I combined a few different recipes I came across and here is what I came up with. These sprouted oatmeal breakfast bars are great for breakfast, but also a great snack for when you are on the go.

First mix these ingredients together in food processor until fully combined:

2 bananas

2 tbsp chia seeds

1 cup greek yogurt

¼ cup coconut oil

1 egg

¼ tsp sea salt

¼ tsp cinnamon

1 tsp vanilla

6 dates softened in boiling water

Once above ingredients are combined, gently mix in the remaining ingredients – just a few pulses on the food processor.

1 cup sprouted oats

1 cup sprouted oats finely ground (use blender or food processor to make into a fine powder)

1 cup shredded coconut

1 tsp baking soda

½ cup goji berries

Combine wet ingredients together in a blender and then slowly add in dry ingredients. Once all ingredients are combined, pour into a 9×13 baking dish. I use parchment paper in the bottom of my pans to prevent sticking, but you could easily use coconut oil.

Bake on 350 for 30 minutes in a 9×13 pan. Let cool and then cut into squares or bars.
