Vegan & Gluten Free Peanut Butter Pie

I got so many requests for this recipe after I posted it on instagram. This pie is vegan and gluten free and so delicious. It’s also super quick and easy to make.

Crust
2 cups gluten free graham cracker crumbs
6 tbsp coconut oil

Blend the gluten free graham crackers on high in a food processor until they form crumbs then add in the coconut oil. Pulse a few more times until combined and a dough forms. Press firmly into pie dish and bake on 350 for 10 minutes.

Filling
18 ounces so delicious coco whip
8 ounces kite hill foods cream cheese
1 cup creamy peanut butter
1/4 cup maple syrup

Mix filling together and place in chilled pie crust. Garnish with dark chocolate curls then freeze until ready to eat.
