Sloppy Joes are probably one of everyone’s favorite childhood meals. I can still remember being at friends’ houses at a kid, or having friends over, and eating sloppy joes. I wanted to take that same idea, and the idea childhood comfort food, and create a healthier version. This healthy version is loaded with veggies, are grain-free and dairy-free, and can be served over sweet potatoes hash, cauliflower rice or in a baked sweet potato boat. What’s even better, is that they are easy to make on the stovetop or in the crockpot.
Ingredients:
- 1 lb ground turkey or grass-fed ground beef
- 1/2 head small cabbage
- 1 onion chopped
- 1 cup cauliflower rice
- 2 carrot
- 2 celery stalks
- sea salt and pepper to season at each stage of cooking
- avocado oil for cooking oil
Sauce:
- 1 cup paleo ketchup
- 3/4 cup coconut aminos
- 1 tbsp apple cider vinegar
- 1 tbsp worcestershire
- 1 tbsp dijon mustard
- 2 tbsp tomato paste
- 1 tsp garlic powder
- 1 tsp sea salt
- 1/2 tsp pepper
Crockpot Directions:
Heat skillet and cook chopped onion, celery and carrots in some avocado oil. Once onions are translucent and veggies are cooked, add in meat and cook until done. Meanwhile combine all sauce ingredients in a bowl. If you are making this in the crockpot, add the meat and onion mixture along with remaining ingredients to crockpot. Cover in sauce and mix. Set on low and cook for 6-8 hours.
Stovetop Directions:
Heat large skillet over medium heat and cook chopped onion, celery and carrots in some avocado oil with salt and pepper. Once onions are translucent and veggies are cooked, add in meat, with a pinch of salt and pepper, and cook until done. Meanwhile combine all sauce ingredients in a bowl. Once meat and onions are cooked, add in cabbage, cauliflower rice and sauce and cook until cabbage is soft and wilted, stirring occasionally for about 15-20 minutes.
Serve over baked sweet potato, sweet potato or root veggie mash, roasted veggies, cauliflower rice or zoodles.
To make the baked sweet potatoes, cut cleaned and dried sweet potatoes in half. cover in avocado oil, sea salt and pepper and bake on a baking sheet at 400 degrees for 30 minutes.
