I am always on the hunt for quick and easy dinners that are healthy and still deliciously satisfying. This is one of my go to chicken dishes that shakes things up a bit. It is soy free, grain free, dairy free and super yummy and kid friendly.
Recipe:
2 lb chicken cut into small pieces
1/3 cup coconut aminos
1/4 cup raw honey
juice from 1-2 oranges
2 tbsp tomato paste
1 tbsp sesame oil (added at the end)
2 tsp chopped garlic
3/4 tsp sea salt
1/4 tsp pepper
2 tbsp arrowroot powder to thicken sauce
3 carrots
a handful of broccoli florets
1 tbsp sesame seeds
Directions:
Cut chicken up into bite sized pieces. Make sauce in separate bowl by adding coconut aminos, honey, orange juice, tomato paste, garlic, salt and pepper. Have sauce ready to add to pan when chicken and veggies are cooked. Cook chicken over a med high skillet coated with coconut oil for about 5 minutes or until cooked (no more pink). Once meat is cooked add in veggies and cook for two minutes. Add in sauce. Once sauce has reduced slightly, add in arrowroot powder and stir/cook until thick. Add in sesame oil and sesame seeds. Serve over cauliflower rice. Enjoy!!
